Hazelnut (or other nut or seed) Soup (Algonquian dish, hazelnuts originally grew wild on the North American northeast coast and up into Canada and around the Great Lakes. Hazelnuts, along with other nuts and seeds, were commonly used as the base of soups among tribes in the Algonquian group.). Serves 4-6. 1 tablespoon of vegetable oil 1 large onion -- chopped Handful or two of greens -- such as spinach, kale, basil, watercress. It's versatile so use what's in your fridge or garden. 4-8 cups (divided) unsalted vegetable broth 1 lb of roasted hazelnuts, skins removed OR unroasted, unsalted sunflower seeds *Note: you can also use an assortment of both in the soup, or use other nuts/seeds. You'll want to lightly roast nuts and remove the skin after roasting, but you will not want to roast any seeds. spices of choice 1) Heat oil in large pot on medium heat. 2) Add in chopped onion, cook until soft. 3) Throw in at least one handful of greens of choice (removing any hard stems), I like to use one handful of spinach and two handfuls of fresh basil. 4) Cook until greens are wilted. 5) Add in 4 cups vegetable broth and the 1 pound of the nuts or seeds. Stir. 6) Cover and bring to boil. 7) Reduce to simmering and cook for 30 minutes, stirring occasionally. 8 ) Either mash til smooth with potato masher, or use a blender. Add in additional vegetable broth if needed (will likely need another 2 cups so the blender smooths nicely). 9) Reheat, then serve.
Hazelnut & Honey Acorn Squash: (another Algonquian recipe. Squash/gourds are really important and feature heavily among Algonquian dishes. In Wôpanâak, the word for summer ("mat-terll-a-waw-kees-wush") literally means "squash ripe, beans edible". ) Serves 2-4.
handful of hazelnuts half stick of butter (which is a half cup) a spoonful of honey acorn squash, cut in half, seeded, and then cut into thick wedges (like an inch of so wide), leave unpeeled
1. Preheat to 350 F 2. Grind nuts in mortar and pestle, or food processer, until coarse grinds are reached. Add butter and mix with the grinds. Add honey and stir until smooth. 3. Oil a baking sheet, put wedges on it skin side down. Sprinkle with salt and pepper if desired, and then spread on the nut-butter mixture. 4. Cook in over for 30 or so minutes until its tender and easily pierced with a fork. Serve hot.

On 7th of April, I started adapting myself into a keto lifestyle/diet! Here are the recipes I have tried and they are so yummy! Thanks to r/Keto for recommending The Holy Grail! FAT HEAD PIZZA - THE HOLY GRAILPREP TIME 10 mins | COOK TIME 20 mins | TOTAL TIME 30 mins |
INGREDIENTS- 170g / 6 oz / 1¾ cups (approx) shredded/grated cheese (mozzarella is the best or Edam/mild cheese)
- 85g / 3 oz / ½ cup almond flour/meal
- 2 tbs cream cheese
- 1 egg
- +/- salt to taste
- ½ tsp dried rosemary/ garlic or other flavourings (optional)
- Your choice of toppings such as pepperoni, peppers, cherry tomatoes, olives, ground/mince beef, mushrooms, herbs etc.
INSTRUCTIONS
- Put the shredded/grated cheese and cream cheese in a microwaveable bowl. Microwave on HIGH for 1 minute.
- Stir then microwave on HIGH for another 30 seconds.
- Add the egg, salt, rosemary (or other flavourings) and ground almonds, mix gently.
- Place in between 2 baking sheets and roll into a circular pizza shape. remove the top baking sheet. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
- Make fork holes all over the pizza base to ensure it cooks evenly.
- Place the baking sheet with the pizza base on a baking tray or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.
- To make it really crispy and study, flip the pizza over once the top has baked to a golden colour. I turn the pizza onto the baking paper I used to roll out the pizza base, then slide it back onto the baking tray.
- Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.
NOTESNutrition panel is for base only as toppings will vary widely depending on what was added and how much. NUTRITION INFORMATIONServing size: 1 slice (base only) Calories: 203 Fat: 16.8g Carbohydrates: 4g Sugar: 1g Fibre: 1.6g Protein: 11g COMPARE THE NUTRITION PANELS OF A WHEAT BASED PIZZA CRUST WITH THE FAT HEAD PIZZA BASE (IN BRACKETS)Carbs 27g (4g) – Protein 3.8g (11g) – Fat 3.4g (16.8g) – in addition the regular pizza will contain gluten and if store bought, preservative, artificial flavourings and probably some trans fats. Also remember you will only eat 1 or 2 slices of Fat Head Pizza compared to half to 1 regular pizza. Delicious "Faux" Egg NoodlesINGREDIENTS- 2 eggs (.8 carb)
- 1 ounce cream cheese (2 carbs)
- Pinch of Garlic powder
- Pinch of Onion powder
- Pinch of Salt & Pepper
(All seasonings add a carb roughly) INSTRUCTIONS
- Heat oven to 325 degrees, prepare a 8×8 pan with non-stick foil and then use paper towel to spread melted butter around the pan.
- Put all ingredients in blender and blend until smooth and bubbly.
- Pour into prepared pan and bake for exactly 8 minutes! Remove from oven, I immediately remove foil from pan.
- Place the foil on table and let cool slightly.
- Spread the foil out and roll up the “Faux” Egg Noodles and slice!
Low Carb Alfredo SauceINGREDIENTS- 1 Tablespoon butter
- 4 cloves minced garlic
- 1 cup heavy cream
- 6 Tablespoons finely grated parmesan cheese (not from a can)
- 1/4 teaspoon freshly ground nutmeg
- Salt & pepper to taste
INSTRUCTIONS
- In a skillet saute garlic in the butter for one minute only. Pour in the heavy cream and stir.
- Sprinkle parmesan cheese in one tablespoon at a time, stirring constantly.
- Add nutmeg, stir frequently to make sure the sauce doesn’t boil. It will take 10-15 minutes to thicken.
- Salt and pepper to taste.
I have tried these recipes and damn, they are yummy!
